Recently a friend of mine put some keffir lime leaves into a stew to flavor it. It was great. I have a lime tree and I'm wondering if I can use the leaves in the same way. However, mine is a "Bearss" lime tree. Can these leaves also be used for cooking? What's the difference? (I don't mean the botanical differences so much - just from a culinary point... more »

Chewy meat

Bought a chunk of what i thought was really good meat. Turned out to be chewier than a car tyre...my jaw is still sore from eating a steak yesterday. What else can i use this meat for, or can i soften it up, make it more...shall i say less tyre like? Someone told me to "beat the shit out of it"? I take it that refers to beating it with a hammer or something?... more »

Has anyone tried to use the artisan bread recipe for rye bread? Another question, what does a "packet" of yeast equal in measurement? I have a jar of yeast and keep seeing recipes requiring a "packet." My cook book conversion tables are silent on this. Best regards . . .
